Shinichi Inoue trained in Japan as a sushi chef and worked for 20 years in downtown Tokyo before moving to New York for his next journey. Chef Inoue dedicated his entire life to the art of sushi. He worked at KOSAKA at The Surf Club at Surfside, Florida as a head chef from 2020 to 2022.
Mihuyn Han is the chef and owner of Kosaka, a Michelin-starred sushi omakase restaurant in Manhattan, New York. She also runs two other popular restaurants in the city: Ishida Ramen Chelsea, a Japanese ramen restaurant, and Maki Kosaka, a hand roll bar.
